Avocado toast has been the hype for a while now and it’s absolutely worth all that attention. It’s SO good! Since I try not to eat bread too often, I decided to replace it with yam. I am thinking about calling this recipe Avocado Yoast.
Serving Size: 1 – 2 People
Prep Time: 5 – 10 Minutes
Cook Time: 15 – 20 Minutes
1 Ripe Avocado
1/2 tsp Fresh Lime Juice
1/8 tsp Minced Garlic
1 TBL Minced Cilantro
1/8 – 1/4 tsp Minced Jalapeño (Optional)
Yam (Any kind of your choosing is perfectly fine. I use Japanese yams)
Extra Virgin Olive Oil
Freshly Ground Pepper
Slice yam into about six 1/4 – 1/2 inch circular pieces. Place in a bowl and drizzle with a little bit of extra virgin olive oil. Sprinkle with salt and pepper. Mix with your hands until all yam pieces are coated. Heat a pan on medium low. Add a little bit of extra virgin olive oil to prevent any items from sticking. Cook yams for about 6-8 minutes on each side.
FYI: You don’t want to overcrowd your pan. If it isn’t large enough, cook a few at a time.
Remove yams and place onto plate lined with paper towel to absorb excess oil.
While your yams are cooking, you can prepare the avocado.
Remove avocado flesh and place in a bowl. Add lime juice, garlic, cilantro, jalapeño and sea salt to taste. Mash avocado with fork and mix all ingredients together.
Top yams with avocado mixture. Enjoy!
